- 1 bunch of swiss chard
- 2 cups of cooked quinoa-red or white
- 3/4 cup of black beans-(Note-using dried beans vs. canned is better for health but takes more time)
- 1/4 cup of cilantro-chopped
- 1 clove of garlic
- 2 tbsp of honey mustard
- 2 whole tomatoes-diced
- 1 small onion-chopped
- 1 tsp of salt and pepper
- 1 tbsp chia seeds.
For the Swiss Chard Wraps: Place leaves in 1 pot of boiling water for 5 minutes until they turn a bright green color. Once they are done-set aside and let them cool down.
Mix the cooked quinoa, and the remaining ingredients in a bowl. Set aside in the refrigerator for about 1 hour. Finally, place 2 spoonfuls of the mixture in the swiss chard and roll them up into a wrap formation. Enjoy!
