With the Holidays right around the corner, this muffin is a great way for you to start off your day!
Ingredients:
- 1 cup of cranberries-fresh or frozen
- 1 small apple
- 1 1/2 cups of brown rice flour
- 1 tsp of baking powder
- 1 tsp baking soda
- 1 dash of salt
- 3/4 cup of coconut sugar or of choice
- 3 tbsp of Chia seeds
- 2 tbsp of vanilla extract
- 1/2 cup of coconut oil
- 3 tbsp maple syrup
- 2 tsp of cinnamon
- 3/4 cup of almond or soy milk-unsweetened
- Zest from 1 orange
Directions: Preheat oven to 350 degrees. Place the apple in a saucepan over medium heat with 3 tbsp of maple syrup and the 2 tsp of cinnamon-cover with a lid. Heat mixture for about 10-15 minutes until mushy while stirring occasionally. Combine all dry ingredients into one bowl and mix. Combine all liquid ingredients into another bowl. Mix the Chia seeds in a small separate bowl with about 1/2 cup of water until a gel like substance forms-set aside. Add the liquid ingredients into the dry and fold with a spatula. Next add the Chia seeds to the mixture. Finally, add the orange zest to the mixture. Scoop 1/2 cup into each muffin tin. Bake for approximately 20 minutes or until golden brown. Enjoy!
