Pumpkin Stuffed Quinoa Pepper



  • 1 yellow, red, or green bell pepper
  • 1 cup of cooked qunioa
  • 1/4 cup of pumpkin puree
  • 1 tsp of nutmeg
  • 2 tsp of cinnamon
  • 2 tbsp of maple syrup
  • 1 tsp of vanilla extract
  • 1 tbsp chia seeds
  • 1/4 cup of cooked sweet potato
  • 3 tbsp of mozzarella cheese
  • 1 cinnamon stick

Directions: Preheat oven to 350 degrees.

Combine and place all of the ingredients in the bell pepper, except for the mozzarella.  Garnish the bell pepper with the mozzarella and cinnamon stick.  Cook in the oven for 15-20 minutes.  Enjoy!
