Strawberry Avocado Salad

Ingredients:

  • 1 large avocado
  • 2 cups of strawberries-sliced
  • 3 cups of spinach
  • 1 cup of kale
  • 1 cup of roasted honey pecans-see directions below
  • 1/3 cup of feta cheese or goat cheese

Directions for honey roasted pecans:

Preheat oven to 350 degrees.  In a bowl mix 2/3 cup of honey and 3 tbsp of coconut sugar. Once mixed place on a baking sheet to cook for about 10 minutes in the oven until golden brown. Cool for 10 min and garnish on salad.

Directions:

Wash the strawberries, spinach, and kale.  Don’t cut the spinach or kale with a knife, instead break it apart with your hands.  Cutting it with a knife causes a loss of vitamins and nutrients in the kale. Layer the spinach/kale mixture and strawberries in a bowl. Slice the avocados and place on top of the salad along with the pecans, and cheese.
