- 1 sweet potato
- 2 eggs
- 3 tbsp shredded cheese of choice
- 1/2 cup of kale
Preheat oven to 350 degrees. Cook sweet potato in oven for approximately 1 hour. Once cooked use 1/3 cup for the omelet. Scramble two eggs in a bowl and add some seasonings of choice. Place the scrambled eggs in a pan on medium heat. Cook egg for about 4 min and then add the kale on one side along with the sweet potato and cheese. Flip the other side of the omelet over and it is ready to eat!
