Ingredients:
- 3 kale leaves
- 1 cup of fresh or frozen blueberries
- 2 cups of flour
- 1 tsp of baking powder
- 1 tsp baking soda
- 1 tsp vanilla extract
- 3/4 cup of coconut or regular sugar
- 1 cup of milk (I use unsweetened vanilla almond milk)
- zest of 1 orange
- 2 eggs
- 2 tbsp of chia seeds
Directions: Preheat oven to 350 degrees.
Combine all dry ingredients into one bowl and mix. Next combine all liquid ingredients in a separate bowl. Mix the liquid ingredients into dry. Add the zest of an orange followed by the kale. Tear up the kale into tiny pieces with your hands rather than cutting. It helps keep the nutrients in the kale when you do this. Next add the blueberries to the mixture. Place into muffin tins and bake for about 20 minutes. Let cool for 10 minutes and enjoy.
