Black Bean Stuffed Avocados with Maple Oat Sweet Potato Bread

Stuffed Avocados Recipe:


  • 2 avocados
  • 2 cups quinoa cooked
  • 2 cups of black beans cooked (I usually use dried black beans and soak them overnight then cook them)
  • 1/2 cup of red onions (diced)
  • 1/2 cup red tomatoes (diced)
  • 3 tbsp of honey mustard sauce
  • 3 tbsp of BQ sauce
  • Dash of salt
  • Dash of pepper
  • 1 clove of garlic
  • 1 tbsp of chia seeds


In a sauce pan on low heat mix together the black beans, onions, honey mustard, BQ sauce, salt, & pepper.  (I also used a little bit of the bean broth left over from cooking the beans to keep them from drying out.  You may want to do the same or use some vegetable broth).  Feel free to add any additional spices/herbs to your bean mixture.  After the 30 minutes take off the stove and set it aside.  Let cool for 20 minutes.  Once the mixture has cooled, add the remaining ingredients to the mixture.  For the avocados: Scoop out the avocados and set them aside in a bowl.  Mash up the avocados  adding a little bit of salt, pepper, garlic, and chia seeds.  Add the black bean quinoa mixture to the hallow avocado shells and spread the top with the avocado mixture.  Enjoy!
