Hummus Pizza with Egg

  • 1 Flatbread of choice
  • 2-3 tbsp of hummus of choice
  • 1 tomato-thinly sliced
  • 1/4 cup of green onions-chopped
  • 1/4 cup of red peppers-chopped
  • 1/4 cup of cheese of choice
  • 1 clove of fresh garlic-chopped
  • 1/4 cup of spinach or kale
  • 1 egg
  • 1 tbsp of cilantro
  • 3 slices of avocados

Directions: Approximately 30-40 min-Preheat oven to 350 degrees

Cut the tomatoes, red peppers, green onions, and garlic.  Next, coat the top of the Flatbread with hummus and chopped garlic.  Followed by the tomatoes, green onions, and red peppers, and egg.  Bake for approximately 30 minutes, then take pizza out of the oven and place the spinach and cheese on the pizza, put back in oven for an additional 5 minutes.  Cool for 10 minutes and enjoy! You may also sprinkle chia seeds on the pizza!
