- 1/2 of a sweet potato-baked and pureed
- pinch of baking soda
- 3 tsp of baking powder
- 2 cups of GF oat flour-I generally use “Bobs Red Mill Flour”. You can also use regular flour or whole wheat if you don’t have Celiac Disease.
- pinch of salt
- 2 tsp of vanilla extract
- 1/4-1/2 cup of coconut sugar
- 1 1/2 cups of almond milk-unsweetened vanilla
- 1/4 cup coconut oil
- 2 tbsp of cinnamon
- 2 eggs
- 1/2 cup of dates chopped
- 2 tbsp chia seeds
Directions: You will need a waffle maker
Combine all of the dry ingredients in a bowl. In a separate bowl whisk together the eggs, oil, milk, sweet potato, and vanilla extract. Combine the wet ingredients into the dry and mix. Pour into waffle maker. Once waffles are done garnish with chia seeds and enjoy. Feel free to add some fruit to get those antioxidants and extra vitamins/minerals!
Note: Some stores also sell canned sweet potato puree. Feel free to use 1/2 of cup of that instead.
