Sweet Potato Veggie Panini

Servings: 1


  • 2 slices of bread
  • 1/2 of a baked sweet potato
  • 1/4 cup of kale
  • 1/4 cup of red peppers-chopped
  • 2 tbsp honey mustard or sauce of choice
  • 1 tbsp cilantro
  • 2 sliced of tomato
  • 2 tbsp of red onion-chopped
  • 1/4 cup of red and green spinach
  • 1/4 cup of mozzarella cheese-or cheese of choice
  • 1 tbsp of ghee-or butter
  • 1/4 cup of microgreens for garnish
  • 1 tbsp chia seeds

Directions: Note-you will need a panini press

Spread the ghee/butter on one side of each slice of bread. Add all ingredients to the bread as desired.  Place in the panini press for approximately 10 minutes or more depending on how toasted you like it.  Once done garnish with microgreens and enjoy!
