Black Bean Quinoa Salad

Black Bean QunioaServings: Approximately 6

Ingredients:

  • 1-2 cups of red quinoa-cooked
  • 1/2 cup of chopped cilantro
  • 1 cup of tomatoes-halved
  • 2 cups of black beans
  • 1 red and 1 yellow pepper
  • 1 cup of kale
  • 1 tsp of pepper
  • 1 tsp of pink salt
  • 1 tbsp of paprika
  • 1 tsp onion powder
  • 1 tsp of garlic powder
  • 1 clove of minced garlic

Directions:

In a large bowl combine all ingredients and mix well.  Enjoy!
