Colorful Fish Tacos

  • 3 pieces of cod
  • 1 cup of fresh mango-chopped
  • 1 tomato-chopped
  • 1/2 cup of cabbage-chopped
  • 1/4 cup of mozzarella
  • 1/2 cup of cilatro-chopped
  • 2 tbsp olive oil
  • dash of pepper
  • 1 package of mini whole wheat tortillas

Directions: You will need a medium pan

Heat the olive oil on medium heat.  Add the cod, and pepper-grill on each side for approximately 3-6 minutes.  Don’t overcook-the fish should be nice and flaky.  When fish is done let cool for 5 minutes then add to taco with toppings as desired.  Enjoy!
