Ingredients:
- 2-3 cups cooked pearl (Israeli) couscous
- 2 tomato-diced
- 1/2 cup purple cabbage
- 1/2 cup cilantro
- Juice of 1 lemon + zest for garnish
- 2 tbsp olive oil
- Dash of pepper
- Dash of paprika
- Microgreens for garnish
Directions:
In a bowl combine couscous, cilantro, tomato, cabbage, olive oil, paprika, pepper, and juice of one lemon. Mix until well combined. You may also add kale or spinach for some additional Iron and vitamins. Garnish with lemon zest and microgreens.
