Ingredients:
- 3 baby bok choy-chopped
- 1 cup of baby shrimp-defrosted
- 1 red pepper-chopped
- 1 cup of broccoli
- 1 cup of purple cabbage-chopped
- 1 cup of pineapple
- Thai peanut sauce-be sure to check the food label before purchasing
- 1/2 cup of cilantro-chopped
- 2 cloves garlic-minced
- 2 tbsp of olive oil
- 1 tbsp sesame seeds or 2 tbsp chia seeds-for garnish
Directions: Heat skillet on medium heat
Add the baby shrimp, broccoli, peppers, bok choy, cabbage, garlic and oilve oil to the pan and cook for 10 minutes. Next add the pineapple, sauce, and cilantro and cook for an additional 10 minutes. Feel free to garnish with chia or sesame seeds. Enjoy!
