- 1 eggplant
- fresh basil leaves
- 2-3 cups of cooked red quinoa
- 1 cup of plum tomatoes-halved
- 2 cups of kale
- 2 tbsp olive oil
- tbsp coconut oil
- 1 tsp ground pepper
- 2 tsp paprika
- 1 garlic clove-minced
- 1/2-3/4 cup of mozzarella cheese
- 2 cups of tomato sauce-please see pizza sauce recipe or you many use your own. Pay attention to your food label when you are buying sauces (ingredients, sugar, salt, etc.).

Directions: Preheat oven to 350 degrees
Mix the cooked red quinoa in a bowl with kale, lemon juice, olive oil, pepper, and paprika-set aside. On a cutting board, slice the Eggplants into approximately 12-15 slices. Coat each piece with either coconut oil or oilve oil, paprika, pepper, and minced garlic. Bake the eggplant slices for 20 minutes. Let cool for 5 minutes and then place the eggplant on top of the quinoa mixture followed by the sauce, mozzarella and fresh basil. Enjoy!
