Baked Eggplant Delight


Servings: 4-6


  • 1 eggplant
  • fresh basil leaves
  • 2-3 cups of cooked red quinoa
  • 1 cup of plum tomatoes-halved
  • 2 cups of kale
  • 2 tbsp olive oil
  • tbsp coconut oil
  • 1 tsp ground pepper
  • 2 tsp paprika
  • 1 garlic clove-minced
  • 1/2-3/4 cup of mozzarella cheese
  • 2 cups of tomato sauce-please see pizza sauce recipe or you many use your own.  Pay attention to your food label when you are buying sauces (ingredients, sugar, salt, etc.).
  • 1 lemon

Directions: Preheat oven to 350 degrees

Mix the cooked red quinoa in a bowl with kale, lemon juice, olive oil, pepper, and paprika-set aside.  On a cutting board, slice the Eggplants into approximately 12-15 slices.  Coat each piece with either coconut oil or oilve oil, paprika, pepper, and minced garlic.  Bake the eggplant slices for 20 minutes.  Let cool for 5 minutes and then place the eggplant on top of the quinoa mixture followed by the sauce, mozzarella and fresh basil.  Enjoy!
