Blueberry Chia Seed Jam

Ingredients:

  • 2 cups of blueberries-I used frozen
  • 1 cup of water
  • 2 tbsp of honey
  • 1 tbsp of pure maple syrup
  • 1 tsp of lemon zest
  • 1 tsp cinnamon
  • 3-4 tbsp of chia seeds
  • 1 tsp vanilla extract

Directions:

In a saucepan on medium heat combine the blueberries and water-stir for 3-5 minutes.  Add the chia seeds and continue to stir.  Next add the honey, maple syrup, lemon zest, 1 tsp cinnamon, and vanilla extract.  Continue to stir for the next 10-15 minutes or until the mixture starts to thicken.  Remove from heat and let sit for 10 minutes. Enjoy!

Store in the refrigerator for up to 1-week.
