Coconut Maple Glazed Salmon

Coconut maple salmon

Servings: 4


  • 12 oz salmon cut into 4 even pieces
  • 1 cup of unsweetened shredded coconut
  • 2 tbsp pure maple syrup
  • 1 tbsp crushed almonds-for garnish
  • 2 pieces of kale
  • 1 cup of cooked quinoa with lemon, cilantro, tomato and olive oil.

Directions: Preheat oven to 450 degrees.

Coat salmon in maple syrup, followed by shredded coconut. Place on baking sheet with a little bit of olive oil.  Bake for 10-15 minutes flipping salmon over halfway through. Let cool for 10 minutes and place kale, qunioa, and salmon on plate garnished with almonds.  Enjoy!
