Cauliflower Kale Salad


Servings: 2


  • 1 cup cauliflower
  • 1 cup of spinach
  • 1 cup of kale
  • 1 cup of tomatoes
  • 1/2 of one lemon
  • 1/2 cup of micro-greens
  • 3 tbsp nutritional yeast
  • 2 tbsp olive oil
  • 2 cloves of garlic
  • 1 tsp paprika
  • 1 tsp pepper

Directions: Preheat oven to 450 degrees.

On a baking sheet add olive oil, minced garlic, cauliflower, nutritional yeast, paprika, and pepper. Coat the cauliflower evenly.  Bake for 15-20 minutes.  Make sure the cauliflower doesn’t burn.  Once cauliflower has been cooked-let cool for 10 minutes.  Mix spinach, kale, tomatoes, together in a bowl.  Top with cauliflower and micro-greens.  Feel free to add hummus and drizzle with a balsamic vinaigrette or a fig vinaigrette.  Enjoy!
