Easy Bake Zucchini Casserole with Baked Sweet Potatoes

Zucchini Casslerole

Servings: 4


  • 4 zucchini-sliced
  • Tomato sauce-please see pizza recipe for the sauce
  • 4 cloves of garlic-minced
  • black pepper, onion powder, sea salt
  • 1 tbsp olive oil
  • 3/4 cup of mozzarella
  • 4 small sweet potatoes
  • 2 tsp butter
  • pinch of cinnamon

Directions: Preheat oven to 350-you will need two baking sheets and an 8 by 8-inch casserole dish.

First slice the sweet potatoes and place them on a baking sheet with the butter and cinnamon-bake for 1 hour. On another baking sheet drizzle olive oil and add the sliced zucchini.  Followed  by the minced garlic, pepper, onion powder, and sea salt-toss the zucchini until evenly coated.  Place in the oven and bake for 30 minutes or until tender.  Be sure to move the zucchini around every 5-10 minutes with a spatula so it doesn’t burn.  Once the zucchini is done add it to the casserole dish alternating layers with the sauce and mozzarella. Broil for 10 minutes or until golden brown.  Let cool for 10 minutes and enjoy!
