Sweet Potato, Apple, & Date Flatbread

  • 2 small sweet potatoes or one large
  • 1 piece of naan bread-feel free to use gluten-free if you can’t consume gluten
  • 1/2 green apple-cut into thin slices
  • 1/2 cup of kale-teared
  • 2 tbsp goat cheese
  • 2 tbsp green pumpkin seeds
  • 1/4 cup medjool dates-chopped
  • 3 tsp cinnamon
  • 1/2 tsp nutmeg
  • Pinch of all spice
  • 1 tsp vanilla extract
  • 3 tbsp raw/local honey
  • 2 tbsp maple syrup
  • 2 tsp balsamic vinaigrette-you may need a little more or a little less
  • 1 tsp chia seeds

Directions: Preheat oven to 350 degrees. You will also need to bake the sweet potatoes in the oven for 1 hour at 350 degrees before starting the recipe. 

Once sweet potatoes have been cooked/cooled mash them or put them in a food processor until smooth.  Add cinnamon, nutmeg, all spice, and 1 tbsp honey to the mixture-set aside.  Next prepare the balsamic glaze-whisk together balsamic vinaigrette, maple syrup, and honey together.  Be sure to taste the glaze to make sure the balsamic isn’t overpowering-set aside.  Spread the sweet potato mixture on the naan bread, followed by the apple, pumpkin seeds, goat cheese, and dates (you will add the kale after the flatbread has cooked to preserve the nutrients in the kale).  Drizzle half of the balsamic mixture over the flatbread and save a little for after the flatbread has cooked. Bake in oven for 15 minutes.  Once cooled add kale and drizzle the rest of the balsamic mixture over the flatbread, add chia seeds.  Enjoy!
