Ingredients:
- 2 cups almond meal/flour
- 1/2 cup chopped hazelnuts
- 1/4 cup coconut sugar
- 1 tbsp cacao powder
- 1 tsp baking powder
- 1 tsp baking soda
- Pinch of sea salt
- 1 tsp cinnamon
- 1/4 tsp all spice
- 1/4 tsp nutmeg
- 1/4 cup coconut oil
- 3 tbsp honey
- 1 tbsp pure maple syrup
- 1 tsp vanilla extract
- 1 chia seed egg replacement mixture-1 tbsp chia seeds for 3 tbsp water
Directions: Preheat oven to 350 degrees. You will need a loaf pan-9 x 5 or 8 x 4.
In a mixing bowl combine almond meal/flour, baking powder/soda, salt, cacao powder, nutmeg, cinnamon, and all spice. In a separate bowl mix coconut oil, the chia seed “egg replacement” mixture, vanilla extract, honey and maple syrup. Add the dry ingredients to the wet and mix. Fold in the hazelnuts and add mixture to the loaf pan. Make sure the loaf pan has been greased-you can also grease it with coconut oil. Sprinkle coconut sugar over the top of the pan. Bake for 35-45 minutes or until golden brown.
For the parfait:
Ingredients:
- 1 cup Greek plain yogurt-be sure to look at your label and pick the one with the lowest amount of sugar. A lot of companies add a ton of additional sugar to plain Greek yogurt.
- 4 small pieces of banana bread
Directions:
Alternate layering the banana bread and Greek yogurt in a mason jar. Top with some almonds for additional Omega-3 Fatty Acids, fiber, and Vitamin E. Enjoy!
