Sweet Potato Bread


Servings: 8-10


  • 2 small sweet potatoes-baked in the oven at 350 for one hour
  • 2 cups of almond meal/flour
  • 1 cup of whole wheat flour
  • 2 cups of bread flour
  • 1/4 cup of oats
  • 2 1/4 tsp of yeast
  • 1 1/2 cups warm water
  • 1 tbsp olive oil
  • 2 tbsp honey
  • 1 tsp apple cider vinegar
  • 1 tsp pink salt
  • Coconut oil for greasing the bread pan

Directions: You will need a bread pan either 9 x 5 or one similar in size.

Combine the yeast and warm water in a mixing bowl.  Let sit for 10 minutes until the yeast and water start to foam a little.  Next add the salt, olive oil, apple cider vinegar, and honey.  In a mixer on low speed slowly start adding the almond meal/flour, followed by the wheat flour, and lastly the bread flour to the yeast mixture.  Now it is time to add the sweet potatoes.  Continue to mix of low-medium speed until the sweet potatoes are well combined.  Let the dough sit covered with a cloth for one hour until the dough has doubled in size.  Grease the bread pan with coconut oil-add the dough to the bread pan and top with oats.  Cover with clear plastic wrap and let rise for an additional 30 minutes.  After your bread has risen for the second time it is now time to put it in the oven.  Bake for 25-35 minutes.  Enjoy!
