Sweet Potato Bites


Servings: 8-10


  • 1/2 of one large sweet potato or 2 small sweet potatoes-baked in the oven for 1 hour at 350 degrees
  • 1 cup steel cut oats-use gluten free if you have Celiac Disease
  • 1/2 cup crunchy almond butter
  • 1 tbsp chia seeds
  • 1 tbsp honey
  • 2 tbsp pure maple syrup
  • 1 cup of raisins-soak for one hour prior to use
  • 1/4 tsp all spice
  • 2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp pumpkin pie spice
  • 1/4 tsp ground cloves
  • dash of sea salt-optional

-Feel free to add cacao nibs if you would like additional flavor


Directions: Preheat oven to 350 degrees

Note: Make sure the sweet potato is pureed before adding to the mixture.  Combine all ingredients in a large bowl.  Place the mixture in the oven and bake for 15 minutes.  Let cool for 10 minutes and enjoy!  These little sweet potato bites are packed with a lot of delicious nutrients and protein.  If you would like to learn more about the benefits of sweet potatoes please visit the section called “The Truth About Fruits and Vegetables” on my blog!
