Orange Vanilla Bean Granola

Servings: 4-6

Ingredients:

  • 2 cups of old fashion oats-use gluten-free if you have Celiac
  • 2 tbsp of cinnamon
  • 1/2 cup of honey
  • 3 tbsp of pure maple syrup
  • 1 cup of green pumpkin seeds
  • 1 vanilla bean
  • 1/4 tsp fresh grated nutmeg
  •  2 tbsp of orange zest
  • 2 tbsp of chia seeds

Directions:  Preheat oven to 350 degrees.

How to Open a Vanilla Bean:

There is nothing more tasty than using a fresh vanilla bean in baking, the flavor is phenomenal!  To cut the vanilla bean pod open start by splitting the pod lengthwise using a sharp knife on a cutting board.  Cut down the center of the bean being careful not to puncture and cut through the other side of the vanilla bean.  Scrap out the little black beans inside.  Add this to your granola mixture.

Don’t Throw Away the Vanilla Pod:

1.) You can use the pod to act as a flavor enhancer for your sugar and or salt.  Let the pod sit in a mixture of sugar or salt.  This is great for adding additional flavor when cooking or baking.

2.) Homemade Vanilla Extract- Add 3 vanilla pods to 1 cup of vodka and let sit in a cool, dark place for 4 weeks. You can also boil the pods in 1 cup of water and coconut sugar to make vanilla extract.

3.) Add to your tea or coffee.  Chai Tea with a crushed vanilla pod and a little raw honey is delicious!

4.) Add to a fruit salad for additional flavor!

Combine all ingredients (except for the chia seeds and orange zest) in a large bowl and mix until clumps form.  Place granola on a baking sheet lined with parchment paper.  Bake for 15-20 minutes mixing the granola halfway through. Let cool for 15 minutes and add the orange zest and chia seeds.  Enjoy!
