- 1/2 large watermelon-chopped into cubes
- 1 avocado-chopped into cubes
- 3/4 cup fresh mint leaves-teared into pieces by hand
- 1 tsp honey
- 1tsp olive oil
- 2 tbsp fresh lemon
- salt/pepper as desired
In a large bowl combine watermelon, mint leaves, honey, olive oil, lemon, and salt/pepper. Mix well and add the avocados last.
Optional-feel free to add any feta cheese if desired. This is always a great refreshing salad for the spring and summer time. Watermelon is a great choice for helping aid in muscle recovery.
