Fresh Strawberry Cake

Servings: 10-12

Ingredients for Strawberry Cake:

  • 3 cups of fresh strawberries-pureed
  • 1 cup of white flour
  • 2 cups of whole wheat flour
  • 1 cup of medjool dates-pureed
  • 3/4 cup coconut sugar
  • 3 tbsp honey
  • 1/2 cup olive oil
  • dash of salt
  • 2 tbsp baking powder
  • 1 tbsp vanilla extract
  • 3 eggs
  • 2 tbsp chia seeds

Ingredients for Pineapple Glaze:

  • 1 cup pineapples-chopped
  • 1 tbsp coconut sugar
  • 1/2 tsp honey
  • pinch of vanilla extract

Ingredients for Strawberry Glaze:

  • 1 cup strawberries-pureed
  • 1 tbsp honey
  • 1 tbsp coconut sugar
  • pinch of vanilla extract

Directions: Preheat oven to 350 degrees. You will need two cake pans (greased).

In a bowl combine both types of flours, baking soda, salt, and sugar.  In another bowl combine the pureed strawberries, dates, honey, olive oil, vanilla extract, and eggs.  Next, slowly add the dry ingredients to the wet.  Use a mixer on low speed for 3 minutes, you can also use a hand mixer but it will take a little longer. Once everything has been mixed add the chia seeds to the batter-set aside.

Now its time to make the pineapple glaze that goes on the bottom of one cake pan.  Start by heating a small sauce pan on the stove adding all of the ingredients for the pineapple glaze.  Make sure that is is on low-medium heat and is covered with a lid.  Stir occasionally for 15 minutes or until pineapples are soft. Remove from heat when done and add to the bottom of one greased cake pan.  Followed by the cake batter.  In the next greased cake pan just add the remaining cake mix.  Bake at 350 degrees for 25-30 minutes.

Strawberry Glaze:

Add the pureed strawberries to a mixing bowl, followed by honey, coconut sugar, and vanilla.  Mix on low speed for 5 minutes.  Once the cake layers have cooled you will put the pineapple strawberry cake layer on the top and the other layer on the bottom.  Drizzle the strawberry glaze over the top.  Enjoy!
