Ingredients:
- 2 crowns of broccoli
- 2 1/2 tbsp olive oil
- 1 cup dry quinoa
- 2 cups water
- 2 cups vegetable broth
- 3 cloves of garlic (minced)
- 1/2 tsp fresh grated ginger
- Dash of garlic powder
- Dash of ground pepper
- 1 tbsp milk
- 1/4 cup sesame ginger dressing
- 1 cup cheddar cheese
- 2 tbsp nutritional yeast
Directions: Pre-heat oven to 350 degrees. You will need a casserole dish.
Place the two broccoli crowns in aluminum foil with 2 tbsp olive oil, dash of garlic powder, and black pepper. Wrap them up and bake in the oven for 45-60 minutes. In the mean time start making the quinoa, place two cups of water in a saucepan with 1 cup of quinoa. Bring the quinoa to a boil and then let simmer (low heat) for 10 minutes with the lid on to retain the moisture. Once the quinoa is done, add two cups of vegetable broth, remaining olive oil, black pepper, garlic powder, minced garlic, milk, 3/4 cup of the cheddar cheese, ginger, and sesame ginger dressing. When the broccoli has finished baking cut them up into smaller florets and add them to the quinoa mixture. Place the broccoli quinoa mixture in the casserole dish. Next, place nutritional yeast along with the remaining 1/4 cup of cheddar cheese on top of the casserole. Broil for 5 minutes of until the cheese is brown and crispy. Let cool for 15 minutes and enjoy!
