Ingredients:
- 1 large cucumber or 2 small thinly sliced-washed and rinsed
- 4 tbsp rice wine vinegar
- 2 tbsp low sodium soy sauce
- dash of pepper
- dash of cayenne pepper
- 1 tsp of honey
- 2 tsp freshly grated ginger
- 2 tbsp olive oil
- 2 tbsp sesame seeds
Directions:
Begin by cutting up the cucumbers into thin slices and set aside. In a bowl whisk together the vinegar, soy sauce, both peppers, honey, ginger, olive oil, and sesame seeds. Finally add the cucumbers to the bowl and mix together. Refrigerate when done.
